    DIRECTIONS:

    A. DONUT

    1. Combine all ingredients and mix at low speed for 1 minute. Scrape sides.

    2. Shift to high speed and mix until dough is fully developed.Rest dough for 30 minutes

    3. Roll out dough (‘’sheet’’) to about 10mm thickness and rest for 30 minutes.

    4. Cut out using doughnut cutter and arrange on

    cheesecloth-lined trays. Proof for about an hour or until double in size.

    6. Preheat fryer to 180°C. Fry for 40 seconds on each side. Drain excess oil on paper towels and cool.

    9. Coat sugar or apply sugar glaze.

    B. SUGAR GLAZE

    1. Combine powdered sugar and gelatin and mix while gradually adding hot water.

    2. Add light corn syrup and mix until smooth and thin. Keep warm.

    This comes at the heels of Jollibee’s successful debut in Times Square, with over 2500 locals and tourists queueing up on opening day and consistently outperforming targets.
